Our head chef Franz Schönegger is revealing his recipe for one of our delicious Christmas creations, for you to cook at home.
Quantities for four apples
4 sour apples (Gala)
1 lemon (juice)
175 g marzipan (raw paste)
60 g butter
60 g raisins
60 g almond flakes
½ tsp. cinnamon
Egg liqueur cream:
225 g cream
7 cl egg liqueur
Icing sugar, almond slivers and raisins for sprinkling
Preheat the oven to 220° C. Wash the four apples, remove the cores and sprinkle lemon juice over the apples. Brush 10g of melted butter around a baking dish. Place the rest of the butter into a mixing bowl. Roughly grate the marzipan over it, add the cinnamon and mix everything with a mixer. Fold in raisins and almond flakes. Fill the apples with the marzipan paste mix and add to the baking dish. Bake in the oven for around 25 minutes at 220° C (in a fan oven).
Our patissièr’s inside tip: Whip the cream while baking until it is semi-solid and stir in the egg liqueur. Sprinkle icing sugar, almond slivers and raisins over the warm apples to taste. Serve the baked apples together with the egg liqueur cream.
