Our chef, Franz Schönegger, divulges a traditional Easter recipe for you to bake at home.
Ingredients for 4 servings:
500 g smooth flour
30 g yeast
250 ml milk
80 g icing sugar
120 g butter
2 egg yolks
2 tbsp raisins
1 egg yolk for brushing
Grated zest of one lemon (untreated)
1 knife tip ground nutmeg
Butter for greasing baking tray
For the Osterpinze, first mix a "Dampfl" (Austrian for sponge), cover and leave to rise until doubled in volume.
Preparation of the "Dampfl" sponge
Heat 2 tbsp milk and dissolve the yeast in it. Take 2 tbsp flour and 1/2 tsp icing sugar and mix them into the yeast-milk mixture. Cover the "Dampfl" sponge with a cloth and leave in a warm place to rise to double its volume.
In the meantime beat the egg, melt the butter and grate the untreated lemon.
Then add to the butter the 2 egg yolks, the beaten egg, icing sugar, grated lemon rind and nutmeg and whip the mixture until fluffy. Mix this batter together with the flour, "Dampfl" sponge and remaining milk and knead the dough until it is smooth and soft.
Mix in the raisins, cover the dough with a damp cloth and let it rise again for about 20 minutes. Roll the dough into a smooth ball, lay it on a baking tray greased with butter, cover and let it rise once again.
After the dough ball has once again increased visibly in volume, brush with egg yolk, make three deep cuts and let it rise yet again for 15 minutes.
Bake the Osterpinze in a preheated oven at 170°C for about 30 minutes.
