Our head chef Franz Schönegger is revealing a delicious health food recipe for you to cook at home:
For four portions you need:
4 mini cucumbers (or 4 cucumbers of 100 g)
4 slightly heaped teaspoons of sunflower seeds
12 cherry tomatoes
300 g of granulated cream cheese (0.8 % fat)
8 stems of fresh basil
Wash the cucumbers, and drain them. Cut them into halves lengthwise, and remove the seeds with a teaspoon.
Add the sunflower seeds to a non-stick pan, without any fat, and toast on a medium heat until light brown.
Wash the cherry tomatoes, remove the stalks, and finely dice.
Mix the cream cheese in a small bowl with the browned sunflower seeds, diced tomatoes, salt and pepper.
Wash the basil, and drain well or carefully dab with a cloth. Remove the leaves and slice into fine strips. Fill the cream cheese mixture into the de-seeded cucumber halves, sprinkle with basil and serve.
Our tip: mini cucumbers contain less water than normal cucumbers, which makes them firmer. If you can’t find any mini cucumbers (also known as Frühlingsgurken in German-speaking countries), you can just use 20 cm-long cucumbers.
