Our head chef Franz Schönegger is revealing his recipe for one of the delightful creations from our patisserie for you to make at home:
For six portions you need:
One ovenproof dish of around 18 x 18 cm, or six dessert glasses
For the sponge fingers:
3 tablespoons of coffee liqueur
50 ml of cherry juice
10 sponge fingers
350 g of fresh mixed seasonal fruits
Raspberries and blueberries
300 g low-fat curd
1 vanilla pod
100 g mascarpone
50 g icing sugar
Mint for garnishing
Mix the coffee liqueur and cherry juice. Lay sponge fingers at the bottom of a glass or an ovenproof dish, and sprinkle the liqueur and juice mix over the top. Carefully wash the fruits and dab dry with kitchen paper.
Beat the low-fat curd for around five minutes until creamy with a hand mixer. Halve the vanilla pod and scrape out the pulp. Add the mascarpone, icing sugar and vanilla pulp to the curd and mix into a consistent cream. Put 1/3 of the cream in the dish and smooth over the sponge fingers. In glasses, several layers can be built (see photo).
Put a few fruits on the side for the garnish, and distribute the rest onto the layer of cream (placing the raspberries with the opening on the bottom). After that, evenly cover with the remaining 2/3 of the cream. Put the dish or the glasses in the fridge for at least two hours.
Garnish the Berry Curd Tiramisu with mint and the remaining fruits before serving.
Our tip: Those who like a slightly nuttier taste can, instead of coffee liqueur, use amaretto or hazelnut liquor.
