Our head chef Franz Schönegger is revealing his recipe for one of the delightful creations for you to make at home:
For two people you need:
150 g cherry tomatoes
50 ml olive oil
25 ml white wine vinegar
20 g sugar
250 ml tomato juice
1/2 garlic clove
1/4 teaspoon thyme
1/2 teaspoon basil
Should you like: 1 teaspoon table vinegar
Wash and quarter the cherry tomatoes, then put them into a bowl. Peel and chop the garlic clove, thyme and basil. Allow the sugar to melt on a medium heat in a pan (but do not caramelise).
Puree the cherry tomatoes, white wine vinegar, sugar, tomato juice, garlic, thyme and basil. Add olive oil, stir thoroughly and allow to cool.
Our tip: To sharpen the taste, you can add a teaspoon of table vinegar.
